From Beef Suet to Finished Tallow

Beef suet and beef tallow are related, but they are not the same thing.

What is beef suet?

Suet is the firm raw fat found around the kidneys and organs of cattle. It is usually clean, pale in colour and well suited to producing smooth, mild tallow when carefully rendered.

Suet is the starting ingredient. It must be rendered and purified before it becomes tallow.

What is beef tallow?

Tallow is the finished rendered fat. The raw fat has been gently heated, separated from the remaining tissue, carefully strained and cooled.

In simple terms:

  • Suet is the raw ingredient.
  • Tallow is the finished product.

How Beef Tallow Is Made

Making good tallow is not complicated, but it does require patience and careful handling.

The basic process involves:

  1. Preparing the beef fat.
  2. Gently heating it until the fat melts away from the remaining tissue.
  3. Straining away the solids and impurities.
  4. Cooling the liquid fat until it becomes firm.
  5. Cleaning, remelting and straining it again as needed.
  6. Repeating the process until the tallow is clean, smooth and mild in aroma.

Properly rendered tallow is generally light cream to white in colour, firm at room temperature and mild in scent.
