Beef tallow is a traditional fat made by slowly rendering beef fat until the pure liquid fat separates from the remaining tissue. Once strained and cooled, it becomes firm, smooth and creamy-white.
Used for generations in Australian homes, tallow is now being rediscovered for traditional soap, simple skincare and practical household products.
Beef suet and beef tallow are related, but they are not the same thing.
Suet is the firm raw fat found around the kidneys and organs of cattle. It is usually clean, pale in colour and well suited to producing smooth, mild tallow when carefully rendered.
Suet is the starting ingredient. It must be rendered and purified before it becomes tallow.
Tallow is the finished rendered fat. The raw fat has been gently heated, separated from the remaining tissue, carefully strained and cooled.
